Description: Honey Creek Brand Distilled Spirits Specialty is the result of a five year collaboration with a Mead-Maker that is a close friend. We wanted to make something out of Honey; not merely something With Honey. We are a distillery, not a Meadory so We decided to focus on a new Category adopted by the American Craft Spirits Association in 2020; Honey Spirits. We had several iterations that we experimented with, but in the end, decided to take something very simple and elegant, and make it to exacting standards. Our base mash consists of simple ingredients: Texas-Grown Wildflower Honey, Water, and Yeast. After fermenting to a state of "dry", we then Distilled it to below 160 Proof, preserving the natural honey flavor, and aged it for a few months on Toasted French Oak and Amburano, a Brazilian wood that imparts baking spice flavors. We then tempered this down to 80 proof to allow the aromatics of the Honey and the Amburano to smile through. The result is an amazing mouthful of Honey Comb, smoothed and refined by a subtle hint of a spiced pastry.
